Simple chocolate muffins

These simple to make chocolate muffins can be whipped together quickly for a tasty treat or used to bake with children during the holidays. Either way everyone will enjoy them. Whether you call them muffins, cupcakes or buns, have a go you will love them.

The equipment you need is weighing scales; a bowl for mixing in; an electric mixer or a hand whisk/fork and lots of energy; a muffin tray and muffin cases. Simple!

Ingredients for simple chocolate muffins

This simple recipe requires only a few ingredients:

6 ounces (170 grams) of butter (or margarine – Stork is a good one to use)

6 ounces (170 grams) of caster sugar. Caster sugar is finer than granulated and gives a smoother texture.

5 ounces (140 grams) of self raising flour

1ounce (28 grams)of cocoa powder

3 eggs

Cooks tip: remember this is baking and is reliant on the quantities being accurate so make sure you weigh out your ingredients. Don’t estimate.

This mixture will make around 12 deep muffins.

What you need to do

If you have never baked before, or you don’t bake very often, my advice would be to weigh out all your ingredients first. That way you are prepped and ready making you able to concentrate on the recipe.

First, cream the butter and sugar together. This means you put them both in a bowl and mix them together until they have a smooth consistency. If you are using an electric mixture this is straightforward. If you do not have one however, you can still mix them together using a fork. Either way is fine but make sure your butter or margarine is room temperature as this makes the process much easier.

Next, when you are happy the ingredients are well combined beat in the eggs. Use a hand whisk ( or a fork) if you don’t have an electric mixer.

Finally, carefully whisk in the cocoa and flour. Start slowly at first so you don’t end up covered in white and brown powder! Keep mixing until the colour becomes slightly paler. This is caused by the air being beaten into the mixture and will help your muffins rise.
